食材：折耳根200克（选叶子多，新鲜的），莴笋中段50克，辣椒油45毫升，白糖8克，上等酱油30毫升，精盐0.5克，味精1克。

做法：

1、将莴笋洗净后切成长8厘米，粗0.3厘米左右的丝；莴笋丝要用盐略漤（就是用盐或其他调味品对烹饪原料进行腌制或拌渍）后，沥干水分，装入盘底待用。

2、将折耳根的根部折去并洗干净，可适当折小些，放在莴笋丝上面。

3、将酱油、白糖、味精、辣椒油、调制成红油汁，淋在折耳根和莴笋丝上，混合均匀即成。
