1、酱卤猪蹄

原料：猪蹄450克，花生38克，香料1包，香菜少许，味精1／6茶匙，冰糖19克，酱油1大匙，海鲜酱1／4茶匙。

做法：1、猪蹄切块，用滚水烫过。

2、将猪蹄、香料、花生及香料一同用大火煮15分钟。

3、煮好的卤猪蹄放入大碗，上置香菜点缀。

2、香葱猪蹄

原料：葱50克，猪蹄4个，食盐适量。

做法：1、将猪蹄拔去毛桩，洗净，用刀划口。

2、将葱切段，与猪蹄一同放入锅中，加水适量和食盐少许，先用武火烧沸，后用文火炖熬，直至熟烂即成。

3、红烧猪蹄

原料：猪蹄750克，盐、葱各13克，姜8克，香油、料酒各25克，花椒5粒，冰糖50克，汤1300克。

做法：1、将猪蹄刮毛洗净，剁去爪尖劈成两半，用水煮透后放入凉水中。姜、葱拍破待用。

2、用炒勺将少许香油烧热，放入冰糖炸成紫色时放汤调至浅红色为度。3、加入猪蹄、料酒、葱、姜、盐、花椒，汤烧开后除去浮沫，用大火烧至猪蹄上色后，移至小火炖烂，收浓汁即成。

4、猪蹄瓜汤

药材：红枣30克，黄芪、枸杞子各12克，当归5克。

原料：猪前蹄1只，丝瓜300克，豆腐250克，香菇30克，姜5片，盐少许。

做法：1、香菇洗净泡软去蒂，丝瓜去皮洗净切块，豆腐切块。

2、猪蹄洗净剁块入开水中煮10分钟，捞起用水冲净，黄芪、当归放入过滤袋中。

3、锅内入药材、猪蹄、香菇、姜片及水10杯，以大火煮开后，改小火煮至肉熟烂(约1小时)，再入丝瓜、豆腐续煮5分钟，最后加入盐调味即可。

5、香醋猪蹄

原料：猪手1只，老醋1小支，老姜1块，辣椒干、酱油、蒜米、糖(冰糖更好)适量。

做法：1、猪手去毛，砍块，下水煮去血水，洗净。

2、姜切大块拍扁，和猪手块一起下锅炒(免油)，开始泛油的时候加蒜米(整粒)、辣椒干，少许酱油和半支醋煮滚。

3、加水没过所有材料，煮至猪蹄糜烂，加糖，试味，不够酸加醋。

6、猪蹄豆汤

原料：猪脚500克，黄豆50克，姜、葱花、盐适量。

做法：猪脚在开水中焯一下洗净。黄豆在水中泡一会儿。高压锅内放入黄豆、猪脚、姜片同煮20分钟。放入葱花，调味可食。

7、蹄煲黑豆

原料：猪蹄两只(砍成8小块)，黑豆150克， 生姜3片。

做法：1、将猪蹄用水煮开，将水倒到掉。

2、再将洗好的黑豆、姜片与猪蹄一块放入锅中，用文火煲3小时，然后加入适量盐即可。

8、花生炖猪蹄

原料：花生米200克，猪蹄500克，盐、葱、姜、黄酒各适量。

做法：将猪脚爪及毛去掉，洗净，用刀划口，放入锅内，加花生米、盐、葱、姜、黄酒、清水适量，用武火烧沸后，转用文火熬至熟烂，随量食用。

9、冰糖元蹄

原料：猪蹄。

调料：冰糖、绍酒、酱油、盐、葱结、姜片。

做法：1.将猪蹄放在清水里，刮洗干净，用刀在内侧软的一面顺长剖开至刀深见骨，再在大骨的两侧各划一刀，使其摊开，然后，切去四面的肥肉成圆形。

2.将蹄膀放入开水锅里煮10分钟左右至外皮紧缩捞出，用清水洗净。

3.炒锅内放一只竹箅子，将蹄膀皮朝下放在上面，下清水淹没，再加入绍酒、酱油、精盐、冰糖、葱结、姜片，用旺火烧开，加盖后，在小火上再烧半小时左右。

4.将蹄膀翻身，烧至烂透，改大火烧至汤水如胶汁、泛出油光时，将蹄膀取出，放在汤碗里，皮朝下，拣去葱结、姜片，把卤汁浇在蹄膀上即成。

10、香辣美容蹄

主料：生猪蹄750克

配料：花椒、干红辣椒、葱、姜、蒜、芝麻、料酒、盐、味精、冰糖、大料、桂皮、香叶等。

做法：1、先将生猪蹄在火上烧一下，去毛，然后切成块状放入油锅炸至表皮微焦。 　

　2、将炸至微焦的猪蹄放入热水中焯一下，去掉焦糊味。

3、把冰糖放入锅中炒成焦糖色，备用。

4、把大料、香叶、桂皮、葱、姜、蒜放入锅中一起炒，制出香味，然后放入料酒，加水，把焯好的猪蹄放入水中煮制，大约1个小时。在这个过程中，加入盐和味精，还要把制成的焦糖色不断地加入水中，使猪蹄上色。

5、把煮熟的猪蹄捞出，装盘。再把花椒和干红辣椒用少许油煸至辣椒微黄，出锅淋在猪蹄上，再在其上撒上一些芝麻。

11、大蹄扒海参

主料：水发海参750克，猪蹄2个。

调料：植物油800克(实耗约50克，熟大油100克，姜块、酱油各15克，料酒25克，葱姜油、盐各20克，白糖50克，味精5克，葱段25克，糖色少许，湿淀粉适量，鸡汤1.5公斤。

做法：1.猪蹄刮洗干净，在外侧划上一刀，用开水煮透，捞出控去水分后放入烧有7成热的植物油炒勺中，炸至金黄色，捞出沥油。海参洗净后用直刀一世两半待用。

2.炒勺将大油烧热煽炒葱、姜拍松，并烹入料酒和酱油加入味精、鸡汤和盐、糖色。 把势放入炒勺内，再放上猪蹄，烧开1小时将猪蹄翻转过来，再用小火将猪蹄煨烂，放 入盘中。将葱、姜拣出，取出垫，将海参放入勺中3分钟，用湿淀粉勾芡，淋入葱姜油即成。

12、红扒猪蹄

原料：肥猪蹄四只，择净毛根，开水烫煮去血水，捞出后投入宽水中，加入卤料，黄酒，糖大火烧开，转小火焖煮熟烂，取出拆骨，尽量保持猪蹄的完整，拆好后备用。

做法：将猪蹄抹匀老抽，晾干下油锅煎炸皮面，糖色固定即可，另起油锅将葱姜爆香后，投入猪蹄，加好料酒两大勺，冰糖或砂糖两勺高汤没过原料，适量盐，酱油，味精，烧开收汁，小心将猪蹄托出码大盘内，余汁浇在上面即可。

13、糖醋猪蹄

原料：猪蹄。

调料：老醋、老姜、干辣椒、酱油、蒜、糖。

做法：1.猪蹄去毛、砍块儿，下水煮去血水、洗净。

2.姜切大块拍扁，和猪蹄块儿一起下锅炒（免油），开始出油的时候加蒜（整粒）、干辣椒、酱油、醋煮滚。

3.加水没过所有材料，煮至猪蹄软烂，加糖即可。
