西红柿尖椒炒茄子

原料：茄子、西红柿、青椒、大蒜、花椒、生抽、盐

做法：

1. 茄子洗净，保留外皮，切成小块，过清水漂洗一下，捞出；

2. 倒入比平时炒菜稍多的油，低油温时丢入花椒粒，待油温升高至开始冒青烟，花椒粒的香味已经充分激发出来后，捞出丢掉，迅速倒入将茄子倒入，大火，快速翻炒，待炒至茄子开始变软后，洒入一半勺盐，调入适量生抽，翻炒，倒入清水，基本淹没茄子的一半，盖上锅盖；

3. 将西红柿和青椒分别切好，揭开锅盖，码在茄子上面，先不要翻，继续盖上锅盖，中小火焖，焖制的时间基本上4、5分钟，正好可以剥蒜，并将大蒜剁成蒜末，开盖，将所有食材翻炒均匀，撒入蒜末，翻炒1、2分钟即可。

爆炒蛏子

原料：蛏子、葱末、姜丝、蒜、干辣椒

做法：

1. 蛏子买回来反复清洗，用盐水浸泡半小时，准备好葱末，姜丝，蒜蓉、干辣椒少许；

2. 热锅放油，放入所有切好的配料，翻炒，倒入沥干水的蛏子，一起迅速翻炒；

3. 放入适量生抽，盐，炒至蛏子壳开，30秒内起锅。

农家小炒肉

原料：五花肉、青、红尖辣椒、蒜、湖南剁辣椒、豆瓣辣酱、生抽、老抽

料酒

做法：

1. 五花肉洗净切片，青、红尖辣椒、蒜切片待用，取小碗，把五花肉用老抽、料酒、干淀粉腌制10分钟；

2. 锅内倒油，把腌好的肉下油煸炒变色后盛出待用，锅内倒少许底油，放剁辣椒，炒后香味后放青、红尖辣椒和大蒜片；

3. 再放入炒好的肉片，调味，再翻炒几下，最后放豆瓣辣酱即可。

辣炒藕丁

原料：藕、洋葱、青红小辣椒、香菜、酱油、老抽、糖、香醋、香油、盐、料酒

做法：

1. 食材洗净，切好；

2. 锅中放少许油，放入洋葱和青红椒爆香炒软，下入藕丁爆炒均匀，烹入香醋，放入酱油，老抽，糖，适当按口味加盐，翻炒均匀；

3. 全程大火爆炒，炒至锅中无汤汁，有些焦黄即可淋入一点香油出锅。

小炒豆腐皮

原料：豆腐皮、麦芹、胡萝卜、瘦肉、青椒、盐、花椒粉、料酒、生抽、鸡精、淀粉、葱、姜、蒜

做法：

1. 豆腐皮切丝，水开放入炒一下水捞起备用，青椒切丝，葱，蒜切碎，胡萝卜切丝，麦芹切和胡萝卜丝差不多长的段，瘦肉切丝，放入姜末、葱末、盐、生抽、料酒、花椒粉、淀粉拌匀腌制10分钟；

2. 油热放入肉丝炒熟，铲到锅的边缘，余油里放入青椒，葱，蒜煸香。再放入胡萝卜丝和芹菜翻炒；

3. 最后放入豆腐皮翻炒，放盐、花椒粉、少量鸡精，翻炒均匀即可。

剁椒蒸鸡翅

原料：鸡中翅、剁椒、蒜、姜、香菜末（或葱末）、烤肉酱

做法：

1. 鸡中翅洗净剁半，焯水后加烤肉酱腌10分钟，姜、蒜剁成末，加入到剁椒中拌匀；

2. 锅中加少许油烧热，倒入拌好的剁椒炒香，再倒入鸡翅炒匀；

3. 装碗里入锅蒸15分钟，最后洒上香菜末即可。

蒜苗青椒回锅肉

原料：五花肉、甜面酱、郫县豆瓣、花椒、酱油、料酒、白糖、鸡精、生姜、大蒜、青椒、蒜苗、豆豉

做法：

1. 炒锅置灶上，开火，锅烧得极热，新鲜五花肉放锅里烙得肉皮焦黄，放冷水里浸泡后刮洗干净；

2. 锅里烧水，加入处理好的五花肉、干辣椒、姜片，旺火煮大约25分钟，将肉取出摊凉；

3. 青椒滚刀切小块、蒜苗拍破后斜刀切段，姜蒜切片，锅里烧油，油温八成热时下熟五花肉片爆得颜色转变，逼出肥肉的部分油脂；

4. 下姜蒜和花椒，小炒一会儿后下郫县豆瓣、甜面酱、白糖、酱油、料酒同炒，下青椒，炒至青椒表皮起褶皱，放一点豆豉，撒入蒜苗段、调入鸡精，转大火翻炒几下后起锅装盘。

韩式鲜菌辣肥牛汤锅

原料：肥牛、大白菜、鲜香菇、老豆腐、韩国辣酱、蟹味菇、蒜末、盐、糖、大葱

做法：

1. 烧一锅水，不用烧开，大概60度左右的时候，把韩国辣酱隔着网筛压到水中，网筛中剩下的残渣丢掉；

2. 另准备一口锅，油热后，先爆香蒜碎，倒入肥牛片，炒到全部变色，捞出备用；

3. 加入第一步中过滤好的辣汤，烧开，撇去浮沫，接着将老豆腐片、白菜段、香菇、蟹味菇全下进去，盖上盖，中小火煲10分钟左右；

4. 再放入炒好的肥牛，煮开，最后调入盐和糖调匀，最后放上大葱片装饰。

彝族坨坨肉

　　材料：黑山猪肉、干辣椒、盐、木姜子、葱

　　做法：

　　1.猪肉下锅煮30分钟左右捞出；

　　2.木姜子打末；

　　3.坨坨肉中加入盐、木姜子、葱、干辣椒调味。

荞粑粑

　　材料：荞面

　　制作过程：

　　1.荞面加热水和面；

　　2.将面做成饼状，上锅蒸15分钟；

　　3.用牙签辨别食物生熟，如果牙签上沾了一些东西，就表明面还欠一些火候；

　　4.荞粑粑出锅，切块即可食用；

　　5.可以搭配蒜、蜂蜜、盐一起吃。

　　材料：香蕉、 绿叶菜、 燕麦

　　做法：

　　1、将香蕉、绿叶菜切段，放入破壁机；

　　2、加入凉开水、燕麦粉，搅拌即可。

回锅鸡

　　材料：乌骨鸡、青红柿子椒、葱姜蒜、木姜子、花椒、芝麻油、醋、香菜、豆瓣酱、料酒、白糖

　　做法：

　　1、乌骨鸡焯水（时间稍长）；

　　2、油锅中加入姜、蒜爆香；

　　3、放入木姜子、豆瓣酱、花椒，再倒入焯好的乌骨鸡翻炒；

　　4、锅中加入适量水炖鸡肉；

　　5、加入芝麻油、醋、糖、料酒调味；

　　6、加入青红辣椒、香菜、小葱翻炒。

酸菜洋芋汤

　　材料：酸菜、土豆、辣椒、 蒜末、木姜子、盐、青椒

　　做法：

　　1、泡酸菜；

　　2、下锅煮酸菜；

　　3、放入土豆；

　　4、加入辣椒、蒜末、木姜子、盐、青椒调味。
