南京的鸭子铺向来是同时卖红白两味的，即烤鸭和盐水鸭。论皮的酥脆，南京的烤鸭比不了北京烤鸭，论口感的鲜嫩多汁，南京的烤鸭又比不了广式烧味。乍一入口，南京烤鸭的味道并没有太多惊喜，但是其貌不扬的南京烤鸭，在洒上一袋红卤之后，脆皮嫩肉之间布满了酸甜适口的卤子，顿时色、香、味境界全出，便是入口生香，欲罢不能。这家店明明叫章云板鸭，卖得最受欢迎的却是烤鸭，其实盐水鸭也不错，但是有韩复兴在前，就不多推荐了。另一家巴子烤鹅卤菜店，名气大不过章云板鸭，人气却不小。这两家推荐的店在做法上特色并不明显，只是各自在各个环节都比别家出色，便不多描述了。如果你到南京人家里来做客，他也未必会给你推荐这家的鸭子，甚至有的人会毫不犹豫地认为——自己家附近的就是最好吃的
