美食篇：去天津，这些美食一定不要错过

作为北方古城，天津的饮食文化可以说是自成一派，种类极其繁多，每天吃一种，连续一个月也不带重样儿的。天津早餐不像广东早茶那般精致，也没那么多吃饭的讲究，推车、小亭子、路边棚子......有地儿就坐着，没地儿就站在路边吃，尽显天津人骨子里的实诚和草根劲儿。

煎饼果子

煎饼果子可是天津的招牌，正宗的煎饼果子只有在天津的小摊上才吃得到，这蕴含着浓郁津味文化的市井小吃，卖相普通，却也透着一番精致和讲究。

我们曾经专门分享过天津的煎饼果子，地道的一定要用绿豆，不能是白面，绿豆要在前一天浸泡，发胀后后用石磨将去皮的绿豆磨成糨糊状。煎饼最多只能放两个鸡蛋。不少老天津人，早上去煎饼摊子，都会自带两个鸡蛋，既享受了美食，长期下来也省了不少钱，这可是天津才能看到的趣味民俗呢！

在天津，煎饼吃法常见的大致有下面几种：夹单果子（一根油条）、夹双果子（两根油条）、夹果蓖儿（薄脆）和皮儿（只吃煎饼），大胃王们来一套夹双果子或是夹果蓖儿，外加两个鸡蛋，基本就能抗到中午了。

特别说明哈：在煎饼里夹烤肠、夹火腿、夹肉松、夹生菜、夹榨菜，口感是丰富了不少，不过千万别说是天津的煎饼果子，会被鄙视的哦！

果子

天津卫管油条叫“果子”，是最常见的早餐。当地的果子颜色金黄，一根两半，有差不多一尺长，即便是凉了也是直挺挺的，相当硬气，不像其他城市的油条，凉了就软趴趴的。

天津人喜欢吃现炸出来的果子，酥脆酥脆的，可以直接吃，也可以就着芝麻烧饼或是夹大饼，反正就是百搭。

烧饼

烧饼也是天津的一大特色，最常见的有油酥、芝麻和麻酱烧饼，口感很是香酥。

现在的新派烧饼里，还会加入各种馅料，有巧克力、菠萝、草莓，还有加上猪里脊、酱牛肉、鸡蛋的，堪称中国的汉堡包。天津的烧饼，和嘎巴菜、豆浆、老豆腐，都是绝配哦！

果头儿

鼠二觉得就和炸油饼差不多，不过面少一些，口感更脆生。

果头儿表面盖一层红糖，就成了天津人说的糖皮儿、糖果子、糖盖儿，其实就是我们说的糖油饼，油香中带着点儿甜味儿，口感更丰富。

鸡蛋果子

也有天津人管它叫“鸡蛋布袋”、“荷包蛋”，和北京的“鸡蛋灌饼”有点儿像，在炸面果子上撕个小口子，打进去一个鸡蛋，再油炸至金黄色捞出来，一口下去，鸡蛋藏在面饼里，碳水化合物、蛋白质一次补齐了。

天津人特别爱吃烙饼，各种食材都可以卷在大饼里吃，边吃边走还不耽误干活儿，特方便。

鸡蛋大饼在天津街头随处可见。通常要煎两个鸡蛋，然后黄灿灿的放在大饼上，根据个人口味刷上面酱、辣酱、腐乳、虾酱等等，还可以撒上酱萝卜丁、咸菜丝、海带丝、黄瓜丝、葱丝等等，大胃王还要加根香肠，最后将饼卷起来，吃完这么一套，可是相当顶饿的。

一张大饼，口感朴实，再加上各种食材，立刻就变得惊艳起来，除了鸡蛋，还能夹鸡排、鱼排、猪排、薯饼、火腿、里脊、蟹棒、茄夹、藕夹......每天都是新花样，特别受嘴巴挑剔的家伙们的喜爱。

这里要提到天津煎饼果子中的馃箅儿（薄脆），金黄酥香，除了夹在煎饼里，还可以卷进热热的大饼中，口感又不一样哦。

卷圈

这也是天津颇具代表性的小吃了，外表看起来就像个油炸大春卷。

在油皮中裹入豆芽、海带丝、豆干、胡萝卜丝、韭菜、香菜、榨菜丁等等和各种酱料，卷起来，用面糊封住，然后下油锅炸到外脆里嫩，最常见的吃法就是夹在天津人最爱的大饼中，一套大饼裹两个卷圈，包你吃了下午2、3点都不会饿。

炸糕

“耳朵眼儿炸糕”是天津的三绝小吃之一，与狗不理包子、桂发祥麻花齐名。不过各地的美食之绝总逃不过一个魔咒，似乎越有名越被骂得厉害，反倒不如家门口的早点摊儿新鲜炸出来的好吃。天津的炸糕一定要趁热吃，小心滚烫的豆沙馅儿烫了嘴。

包子

天津土著们一般很少会去吃狗不理，反倒是家附近用料实在、价格亲民的包子铺更受老百姓欢迎。天津包子什么馅儿都有，最常见的就是猪肉、三鲜和韭菜馅儿了，吃的时候蘸着醋，就着碗粥，相当满足。

棒子面窝窝头

金灿灿的窝头很受老人家喜爱，现在比较少见到了。

有的店家还会在玉米面里裹上菜馅儿，制成菜团子，配着老豆腐或是锅巴菜很好吃。

蒸饼

这曾经是老天津人常吃的一种早点，现在很少见到了，白面上有特殊的纹路，里面裹着豆沙、红果、红糖等做馅料。
